Vallée des Baux de Provence
The Valley des Baux is located in the south-eastern part of France,
near the city of Arles, by the Rhone River. It is a little bit more
than 800 kilometers south of Paris. It consists of a couple of small
villages surrounded by the mountains of Les Alpilles. Despite the
fact that the Valley is very small it is extraordinarily rich.

Grilled red pepper with olive
oil
Ingredients: 4 red peppers, 1 egg, olive oil, garlic, parsley,
salt, and pepper.
Pre-heat the oven at 480°F (250°C). Cut the peppers in half,
and remove the pips. Place them in the oven until their skins darken
and wrinkle. This should take about half an hour.
Meanwhile, prepare the dressing. Boil an egg. Place the boiled egg
in a bowl and crush it. Add garlic and parsley. Mix while slowly pouring
the olive oil. Add salt and pepper.
Take the peppers out of the oven, let them cool, and peel them. Cut
the peppers in strips, place them on plates, and pour the dressing
over them. Finish by sprinkling olive oil on the peppers.
Serve right away or keep refrigerated to serve as a cold dish.
